Can't they just place signs to interrupt the griefers, I mean they would have to break every single sign to place another obsidian block and since signs aren't a physical entity players can just walk through them.

I'm surprised the Highway griefers didn't call themselves "Highwaymen", which in real life used to be a name for people who raided travelers on land.
