Overnight French Toast with Cream Cheese

12 eggs – beaten well
2 cups milk
1 tsp vanilla
1/3 cup maple syrup
2 8-ounce blocks of cream cheese cubed
1 cup blueberries or more, this could also be any berry
1 loaf of brioche bread

Beat the eggs well and then add the milk, vanilla, and maple syrup – this makes the custard. Set it aside and cube half of the loaf of bread and place it in a well-greased 9 X 13-inch baking dish. Pour on half of the custard mixture. Add the cubed cream cheese, sprinkle on the blueberries. Add the rest of the cubed bread, pour over the remaining custard and top with a few more berries.

Cover with plastic wrap and refrigerate overnight. In the morning remove from the fridge and allow to warm a bit. Thirty minutes would do it but an hour is better. Remove the plastic wrap and cover the dish with aluminum foil. Place into a preheated 350 degree oven for 30 minutes. After 30 minutes remove the oil and cook an additional 35 minutes. Let it sit for about 10 minutes after removing the oven before you serve it to help it set up.

  • I just found you and I’m so glad! This is very similar to my bread pudding recipe from my mom. I’m 85 years old and have been learning how to cook for one and bake for one I have even found out how I can cut a recipe in half or even in fourths if I don’t have a neighbor to share with. I’ve been widowed for eight years and my health is good. The thing is I’m outliving all my neighbors. Well, I guess things could be worse. Looking forward to more of your recipes. Thank you.
  • Looks great Colleen! I have made a Christmas Eve dinner buffet for 47 years for my family. It is getting increasingly hard for me to do as I am approaching 70 yrs old. So, this year I am going to have the kids and grandkids here for Christmas Eve brunch. I think this will be easier to do and I will be able to go to church services in the evening! I also think I will compile the recipes I use into a little booklet and give one to each of the girls as a gift! This recipe will be among them. So, if you have any more brunch ideas please share!     OMG this looks so dam good. I do love Brioche and I have 2 bread machines. LOL. I do have a recipe for Brioche that came with one of the machines and it’s actually pretty good. My husband wanted to throw out my first machine and I said you’ll go before that machine goes. They’re both still here. LOL. Love your recipes and I enjoy watching you.     Oh my! This is so good! I made an 8x8 pan b/c that's all the ingredients I had. It was so easy and very delish! Can't wait to make it for the grands when they come to visit. I just got through canning a bunch of lemon curd and it was very good as a topper on this, really made the blueberries shine. Thank you. Love watching you cook. It's like being in a friends kitchen.😋
