INGREDIENTS:

For Carry -
* Raw Mango (कैरी) - 1 Kg
* Salt (नमक) - 2 Tbsp
* Turmeric Powder (हल्दी पाउडर) - Some

For Masala -
* Musturd Seeds (राई) - 3 Tbsp
* Black Onion Seeds (कलौंजी) - 1 Tbsp
* Fennel Seed (सौंफ) - 2 Tbsp
* Cumin Seeds (जीरा) - 1 Tbsp
* Coriander Seeds (धनिया बीज) - 1.5 Tbsp
* Black Pepper (काली मिर्च) - 1 Tbsp
* Fenugreek Seeds (मेथी दाना) - 1 Tsp
* Black Salt (काला नमक) - 1 Tbsp
* Kashmiri Red Chilli Powder (लाल मिर्च पाउडर) - 2 Tbsp
* Turmeric Powder (हल्दी पाउडर) - 1 Tbsp
* Salt (नमक) - 1 Tbsp
* Asafeotida (हींग) - 1 Tsp
* Sugar (चीनी) - Some

✍🏻𝐑𝐄𝐂𝐈𝐏𝐄:
Soak Raw Mango in the Water for 2 hours. Then remove its upper black part then cut it into slices as shown in the video. Transfer the mango pieces to the bowl, and add some Salt and Turmeric Powder. Mix well, cover it with a cloth, and keep it for 2 days at room temperature. Take out the extra water from them and keep the Mangoes in the sunlight for 1 hour. Roast Yellow Rai Dal, and Nigella/Onion Seeds on a slow flame and take them out on a plate. Then roast separately Methi Dana, Black Pepper Seeds, Dried Coriander Seeds, Fennel Seeds, and Cumin Seeds on a slow flame. Take them out on a plate for cooling down then coarsely grind them. Now mix all ground spices with Yellow Rai Dal. Then add Black Salt, Kashmiri Red Chili Powder, Turmeric Powder, Salt, and Hing Powder. Mix well and Achar Masala is ready to use. pickle. Now add Leftover Mango Water, Achar Masala, Mango, and Sugar. Mix well, cover it with a cloth, and keep for 2 days at room temperature. The Pickle is ready, put it in a glass jar and enjoy the tasty Mango Pickle for a long time.
