Blueberry Pie - A Taste For Blueberries Series- A Traditional Summer Pie That’s Easy & Delicious!

Blueberry Pie

3 (14.5 ounce) cans Blueberries, in blueberry juice
10 Tablespoons sugar, divided
3 Tablespoons cornstarch
1 Tablespoon lemon juice
1 Tablespoon butter
Pastry for a double crust, 9-inch pie
1 egg, well beaten, optional
Sparkling sugar, optional

Preheat oven to 400°.

Drain the berries and reserve the juice from one can.

In a medium saucepan, stir the blueberry juice into the combined mixture of the cornstarch and half the sugar. Cook over medium heat, stirring constantly, until thickened. Remove from heat. Gently stir in the remaining sugar, lemon juice, and blueberries. Let stand while preparing pastry.

Line a 9-inch pie plate with pastry and fill with the blueberry filling. Dot with butter. Cover with the top crust and seal the edges of the two crusts together. Cut slits into top crust for steam to escape.

Beat the egg well and brush over the top crust of the pie. Sprinkle with sparkling sugar on top. Cover edges of the crust with foil or a pie shield to prevent burning. Bake for 30 minutes or until the crust is golden.

    My mom was born in Hungary and came to the states as a child. Tomorrow is the Hungarian reunion and my mom, 84 years old and getting younger ;) makes several pies from scratch, fresh fruit and even the crusts from scratch. Rhubarb/strawberry, blueberry, blackberry, apple, peach, coconut cream, banana cream plus her stuff cabbage, goulash, Kalacs walnut bread and other dishes. I never miss a reunion just because of the food! So much for my keto lifestyle tomorrow :) Your pie looked so delicious! Thanks for sharing your video to us!

    In the past, when making blueberry pie, I used canned filling and made my own crust. So easy. But no one in my family eats it any longer. I like pies better than cakes.

  • A good trick to help prevent that soggy bottom is to put a sheet pan or tray into the oven during the preheat. Then, place your pie on that preheated tray. Browns that bottom quickly to help prevent a leak through. Looks delicious Tom and Melissa.❤❤

    I love your chanel. I have learned so very much. I love the fact that you use several of the methods that my grandmothers used. They were not good at explaining the "why's" and both my grandmothers and my mom are gone now. I think they would have loved your cooking. Thank you for keeping the traditions.     I always use fresh berries to make pie fillings! It is sooo easy to make and taste much, much better! GV pie crust is just as good as name brand.

    National Blueberry Month is July. Here in northern Michigan (the top of the "mitten", not the UP), the local farms are overflowing with blueberries, cherries, and raspberries!     I am enjoying the blueberry series. I love blueberries. My mouth was watering as I watched you making this pie. I was taught to have some water to put around the edge of the bottom crust to help seal it. Then add the top crust and do the edge as you did. I have seen where others do as you did. It's interesting how we have a common goal, and yet do it completely differently. Love you program. Thank you for the show and tell and them you also do the recipe for us to follow. Thanks Melissa!
