One tablespoon of bottled lemon juice is equal to 1/4 teaspoon of citric acid. This means that if a recipe instructs you to add 2 tablespoons of bottled lemon juice to each quart jar before canning, you can easily swap in 1/2 teaspoon of citric acid.

  • I'd given up on pie fillings. All that work! To have it ooze out from under.the lid, and who knows if it was a safe seal, was unacceptable! But, those pie fillings are not the boss of me! I researched, and tried a few experiments, and I believe that I've achieved success! I increased the headspace to almost 2". After reading the Clear Gel label instructions on how much to use, I dialed back the amount I use! I am at a high elevation, so longer cook time may be why the regular headspace and amount of Clear Gel in recipe was not working for me. At any rate, I can now have great fillings and a trustworthy seal.

    Yes they do. People thought I was crazy when I purchased 3 flats of blueberries. That is 12 or 18 pints in a flat. 😊😊😊

    This looks really thick. Much thicker than the blueberry pie filling I made this past summer with the Pamonas Pectin recipe. I also have a purple splotch on my cupboard that stares at me from a blueberry jar that leaked! 😂

    We go blueberry licking here in Florida at the most beautiful farm! I went to school with their family members sixty-some years ago. Some people come by helicopter to pick their berries. I have not canned them before, but freeze my berries. Yes, I want BB pie! Thank you!

  • Blueberry pie filling is great for Pudgy Pies made over the campfire or the gas stovetop. This is a favorite of the grandkids. Get a campfire Pudgy Pie maker and have a fun activity with the family.
