COCONUT CURRY CHICKEN

3 pounds diced chicken breast
3 tablespoons curry powder
(mix these together and let sit for 10 minutes)
1 large onion chopped
2 zucchini chopped
2 bell peppers chopped
Coconut oil
3 cloves minced garlic
1 tablespoon minced ginger
14 ounces canned coconut milk
1 1/2 tsp salt

Cook the chicken in some coconut oil and then set aside. Cook the vegetables, garlic, and ginger in remaining coconut oil. When they are soft, add in the chicken and coconut milk. Heat thoroughly. Serve with rice.


TACO SEASONING

1 cup dried minced onion
1/2 cup paprika
1/2 cup cornstarch
1/3 cup chili powder
4 tablespoons garlic powder
2 tablespoons cumin
2 tablespoons oregano
1-2 teaspoons cayenne pepper (depending on heat preference)
2-4 tablespoons salt (depending on preference)


ITALIAN SAUSAGE AND RICE

1 onion, diced
2 lb. sausage, browned
30 oz original diced tomatoes, canned
3 cups mixed veggies, peas and carrots
1.5 cup brown rice
4 cups beef broth
2 tsp dried oregano
2 tsp garlic salt
1 tsp dried basil
1 tsp pepper
3 cups mexican style cheese

Brown the ground beef and onion in a large skillet until no longer pink, drain any excess fat.
Return skillet to stove top and add in the tomatoes, mixed veggies, rice, beef broth, oregano, garlic salt, basil and pepper. Stir until combined and bring to a light boil. Reduce heat to a simmer, cover and let cook until rice is tender. Fluff rice with fork and top with Mexican style cheese. Cover with the lid for about 3 minutes to let the cheese melt. Sprinkle with parsley if desired.


LEMON BUTTER GARLIC SALMON

1/3 cup butter
1 lemon- juiced
5 garlic cloves, minced
1 tablespoon brown sugar
1 teaspoon dried dill
1/4 cup dry wine
