Amazing Egg Salad Without All the Mayo

This egg salad is perfect for sandwiches or on it’s own as a delicious side dish. It’s stands above the rest thanks to just the right amounts of crunchy celery, apple, and shallot with creamy eggs and potatoes accented with fresh dill and chives. Everything is held together with a scant bit of mayonnaise and mustard for a truly wonderful dish!

Egg salad is a summertime favorite for me. I love taking it to picnics and BBQs and of course, this recipe makes a killer egg salad sandwich! I sneak a little potato into mine and it’s so good!

    I feel like adding potatoes does not make it a potato salad unless you have a larger ratio of potatoes to eggs

    I wasn't going to try this because I'm an egg salad purist and it didn't appeal to me but...when you spoke so tenderly to your sandwich with the words, "you complete me" you captured my heart. I will DEFINITELY be trying your version WITH that bread.

    Pumpernickel is my family’s second favorite bread (after rye)! I hard cook my eggs via sous vide and always add relish/pickles/green olives to my egg salad along with shallots and celery. Love fresh dill too! You rock John.

    I knew right from the start that this was not going to be a recipe I would make (I am very traditional when it comes to my egg salad - lol), but I still watched the video all the way through, twice, because I love John! He is so down to earth, warm and funny, he is just a joy to watch in the kitchen. This recipe is interesting though and if one day I am ever feeling particularly daring, who knows? I might just break down and put a few potatoes and apples in my egg salad. ;)

    I made this with a pound of potatoes for an 'eggy potato salad' for my housewarming party and it went over so well! So good!!!
  • After boiling the eggs for hard boiled I run cold water into the pot and gently crunch eggs against the side of the sink. Than under the the cold running water I remove the shell.

    My father is German so I grew up with pumpernickel and rye bread and love them both. I bought pumpernickel bread yesterday so that I can finally make this recipe and eat it the way you did. I cannot wait to try it and I know it's going to be fabulous.

    "Without all the mayo" was the reason I clicked on this recipe, yet he was still generous with the mayo... Adding herbs is right up my street, nice twist.

    I add my eggs to boiling water. Boil for 13 min. Cool in an ice bath. I never have any issues peeling. I think the ice bath is the key.
  • OMG - I just got gifted with some pumpernickel bread, so am now going to have to make this salad to slather on a slice of it!

  • It is dependent on the freshness of the eggs. The newer the egg the harder it will be to peel. Also keep in the eggs in the pot and shock them under running cold water. Drain out the water and shake them in the pot top break up the shells and the shells should slide off easily.

    Just a tip for easy peeling eggs. My mother in law gave me this tip year's ago and so far, it's worked perfectly. She adds 1 tablesppon and 1 tablespoon of salt into cold water. Add eggs into cold water, brings eggs to hard boil. Take them off and let them set for 10 minutes. Secret is, add unpeeled eggs into bowl of ice water and begin peeling. Mine has always peeled perfecty with this method. Your recipe is totaly different than anything I've tried. Can't wait to make this, looks delicious. Thanks for the video John.
