I believe Kenjaku knows better than Mahito when he says the soul is the body even if it's Mahito's ability you also need to take into account that kenjaku lived for over a thousand year and is someone that switch body. From what Kenjaku said and what we saw so far he's right and you can see it when Toji took over the body of that old lady grandson and also when Geto's body tried to fight Kenjaku.

Mahito's hand probably blows up as he tries to configure Toji's soul honestly. Toji with the soul split Katana pretty much destroys, however the fight could last a lot longer without it, Toji would have to beat Mahito into using a DE so Toji can beat him when he doesn't have Idle Transfiguration.

i also feel like the inverted spear of heaven is also a pretty good counter against mahito since it can nullify cursed techniques on contact if toji stabbed it into mahito he might not even be able to use his soul reshaping healing thing and then using the soul splitter for good measure to make sure mahitos dead as a door nail
