福岡の老舗屋台を手作業で建替え。

1991年から屋台けいじとして30年、先代から数えて60年近く福岡の街を見守って来た屋台は老朽化に伴い、2023年1月5日に解体しました。地域の皆様に愛され守って頂き今日に至ったので、解体作業は再建への希望と夢に心躍る反面、寂しさもありました。そしてこの度、自らの手で屋台を再建築する機会ができましたので、その作業風景を記録としてここに残します。現在福岡の屋台は行政の管理下にあり「屋台基本条例」の元で営業しております。その為、屋台の建て替えに際し、道路使用許可申請、食品衛生法、営業許可申請、屋台の規格確認などの手順を踏む必要があります。今回の動画は2023年1月から2月中ばにかけての作業記録ですが、年始は雨続きだった事もあり、主な手加工は普段仕込みをしているキッチンを片付けての作業になり、想定より営業再開が遅くなってしまいました。また、前職の関係からご縁があり、三重県の伊勢神宮から式年遷宮の御用材を頂きましたので、一部使用させていただきました。貴重なご縁に心より感謝致します。今回の撮影も「食えもん」さん（ @Japanesefoodcraftsman ）に全面協力頂き、記録として残す事ができました。解体、制作に伴い迷惑を掛けた近隣住人の方、撮影に協力頂いた食えもんさんに改めて感謝します。これからも屋台けいじは、地域に根差し、コミュニティーの場としてより良い空間作りを目指して行きますので今後ともよろしくお願いします。

We have been at the mercy of regulations and rules unique to YATAI, and have often been affected by rain and wind, making it difficult for us to even operate. Nevertheless, we will continue to pass on our beloved YATAI culture to the next generation and to bring smiles to our customers' faces as we share it with the world. Advice from bottom of my heart: If you are gonna do this for long term, you gotta seriously start thinking hiring someone since the business is only gonna get better. You might be ok for now, but in the long run, it will take a toll on you. Believe me, brother. I've been in culinary business for some time now, and I know how hard it is. The workload you have to deal with night in night out, I just can't imagine how tough it is. I mean...we never met before personally, but I see that you possess a beautiful soul.
