Alabama White Sauce Recipe:
2 cups Dukes mayonnaise
1/3 cup apple cider vinegar
1 tbsp lemon juice
1 tbsp Worcestershire sauce
2 tsp black pepper finely ground
2 tsp fresh or prepared horseradish
2 tsp hot sauce of choice
2 tsp onion powder
1 tsp garlic powder
1/2 tsp cayenne pepper
Pinch of salt about 1/2 tsp

Spice Rub:
1/2 cup brown sugar
1/2 cup white sugar
6 tbsp paprika
2 tsp ground ginger
2 tbsp onion powder
1 tbsp garlic powder
1 1/2 tbsp kosher salt (I used rosemary salt)
1 tbsp chipotle powder
1 tbsp ground mustard
1 tbsp pepper

    Lifting the skin away from the bird and either stuffing with aromatics or more seasoning really is a great way to produce some badass skin and even deeper flavor development. Great vid as always

    Georgia native here, specifically the southeast. Shrimp 'n' grits is the staple and really marks the area. VERY coastal Georgia.
  • spatchcocking chicken is something every home cook needs to have in their arsenal. it's so easy, the results are fantastic, and it's phenomenal for roasting turkey, too.

    The white bbq sause is insanely good. Supposedly, the main guy that popularized this had buckets of the sauce and would "baptize" 1/2 chickens in the buckets. 😂
  • North Carolina here. The most obvious pick is barbecue, but since you've done plenty of that, another ubiquitous food to the coastal region, and VERY unique, is the "all the way" shrimp burger. A burger bun piled high with fried shrimp, hot sauce, and in NC "all the way" means with mustard, onions, coleslaw, and chili. Very unique and so good. 😊

    I applied Spatchcocking a chicken to my smoker decades ago. It is the best way to smoke chicken. It is moist, smokie and if you use a good rub with a good sauce it is delectable.
