Ingredients:

- 2 cups dried chickpeas (soaked overnight)
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 3-4 green chilies, chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons oil
- Fresh cilantro leaves for garnish
- Lemon wedges for serving

Instructions:

1. Rinse the soaked chickpeas and drain the water. In a pressure cooker, add the chickpeas with enough water to cover them. Cook until the chickpeas are tender. Alternatively, you can cook them in a pot, but it will take longer.

2. In a separate pan, heat oil over medium heat. Add cumin seeds and let them splutter.

3. Add chopped onions and sauté until they turn golden brown.

4. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.

5. Add chopped tomatoes, green chilies, coriander powder, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft and oil starts to separate from the masala.

6. Add the cooked chickpeas along with some of its cooking water to the masala. Mash some of the chickpeas with the back of a spoon to thicken the gravy.

7. Let the Lahori Chana simmer for 10-15 minutes on low heat, allowing the flavors to meld together.

8. Garnish with fresh cilantro leaves and serve hot with naan or rice. Squeeze some lemon juice on top before serving for extra flavor.
