Crockpot PUMPKIN Butter | Pressure Canning

Today we're using the leftover pumpkins, from what we canned the other day - and we're making PUMPKIN BUTTER! In the end, I'm going to can mine. To each their own. This is not approved to can, but I feel ok with it based on the recipe I used. If you're not comfortable, please just freeze it β™₯ I'm super happy with how this turned out. Once it cooked down, the flavors really came to life! Todd's taste test was "Tastes like eating pumpkin pie without the crust πŸ˜‹"

    All the poopoo's about pressure canning pumpkin butter, etc. They need to realize that the ingredients are fully cooked prior to pressure canning, thus killing any botulism spores between the two cooking methods. Relax y'all. Check out late 1800's preservation methods. Hahaha. Y'all would freak. Pig intestine used as the seal on the crocks. Yep, true history. I fully agree we can do what we want in our kitchens. Thank you Rachel for spreading truth!
  • For many years have canned pumpkin puree and pumpkin butter. Only reason they tell you not to can pumpkin is a marketing scam. Because if everyone canned their own pumpkin then Libby's would be out of business come the holidays. Take care and have a blessed evening. β€οΈπŸ€
  • 30 years ago the USDA did not poo poo the idea of canning pumpkin.Β  As a matter of fact, they even listed recipes!
  • The amish can pumpkin butter. I'm sure it is on an industrial scale more so than in our homes but I know others who can it at home. I sure would if I had the pumpkins. Thanks for the recipe

    I currently haven’t had an operational pressure canner for years now because it warped. I’ve been water bath canning my pumpkin butter for 3 years with no issues. Have fun with your fall canning 😊

  • I have always wondered why pumpkin butter is a no no and apple butter is okay. They have the same thickness when you make it. At any rate, looks delicious.

    Yay! I made pumpkin butter, too. I pressure canned it because it's just me eating it, and it will sit in my fruit room for at least 12 months. I absolutely love pumpkin butter toast in the morning with my tumeric/cinnamon coffee. Tastes just like pumpkin pie, and I can have it any time I want it! I actually mixed in one of my giant Trumpucante squash that matured out in the garden to a pretty light orange flesh. It v was 3 feet long and weighed at least 20 pounds.Those squash plants amazed me this year. They grew probably 20 feet and were very resistant to those crummy squash vine borers. The young squash cooked up just like zuchini.

    I did the research on why not to can thick purees. I canned my pumpkin in cubes. I did can carrot ginger soup, but I didn't reduce it completely. Also, I'm not sharing it outside my immediate family. You only have to know one person that contracted botulism from home canning. I completely agree that an experienced canner can follow their own rules. But when it leaves your kitchen........

    Rose red homestead freeze dried and powdered pumpkin, Then rehydrated it enough to use for pie:)

    I haven't freeze dried pumpkin butter yet but I have done apple butter and it turned out great! If you are nervous about freeze drying something, try freezing a small bit in a mold or ice cube tray (half inch high) and then put it in on the end of a tray and freeze dry just to try it. That way you're not doing a whole load of it! You can totally do this with some after you open a jar of that pumpkin butter, especially if it's at a risk of going bad before getting it eaten. πŸ™‚
