The numbers on ground beef represent the percentage of fat in each. A 90/10 ratio is 90 percent lean with 10 percent fat. 80/20 is 80 percent lean and 20 percent fat and so on. The best burgers are made with an 80/20 ratio if you talk to professionals. Fat is flavor, but you don’t want to go to any more than 80/20 for burgers. 73/27 is just too much. 80/20 is what I always use and it’s the perfect sweet spot. 90/10 is much too lean for a great burger.
