  • Tip add lemon juice instead of water . Lemon enhances the pistachio and its flavour.

    If you want it ultra-smooth, use a wet grinder or melanger. I use the Premier Melanger for nut and seed butters, and it only takes a couple hours to get them as smooth as any commercial product out there. It also has the added benefit of intensifying the flavor, since virtually all of the flavorful compounds are released during the grinding process.

    Good Evening: I am going to make this paste tonight. I plan to use some of this for gelato I am going to try to make for the first time in a few days. It’s seems as If I need to add more water to that so it can blended with the gelato custard. I do not want to add green food coloring. Will this paste make the gelato green?

  • Hi can I use salted raw pistachios n soak in warm water n clean it n then make paste

    I try to avoid using a food processor because it heats up the food and changes its taste. It is always better to do this by hand with a mortar and pestle. When you do it by hand u probably wont need to add water. Try adding pistachio oil instead of water.
