Puff Pastry Burger Bites
Robby and I were inspired by a recipe we saw on TV Saturday morning. They used chunks of filet mignon, we’re using mini burgers. If we’re having filet, it’s not gonna be used as an appetizer! We’re adapting their method, it’s the method here that’s important, from there you can create your own variation. Here’s what you need:
1 sheet of Puff Pastry (they come 2 to a pack, just place the other back in the freezer in a ziplock)
1 egg
Cheese, we used sharp cheddar. We folded each slice so you need 5-7 pieces
Onion sliced thin
Cherry tomatoes cut in half
Lettuce leaves cut to size
1 lb of hamburger made into 20 mini patties, seasoned with salt, pepper & granulated garlic
Pickles
Here’s what to do:
Pre heat your oven to 400°
Roll your puff pastry just a bit so you can cut it into 20 2” squares - you saw mine, they were far from perfect 🤣😂🤣😂 place on parchment covered cookie sheet.
Dock each square , or prick them with a fork so they won’t balloon up. Beat your egg with a splash of cold water to make an egg wash. Brush each square with the egg wash.
Place a piece of cheese on each square top it with a piece of thinly sliced onion and two pieces of the cherry tomato. Lightly salt and pepper the tomatoes. Place in the oven and bake for 15-20 until pastry is nicely browned.
As your puff pastry bakes fry up your little burgers (20) and set aside. Wash some lettuce, pat it dry and tear it into little pieces to fit each square.
Either make some “special sauce”, use thousand islands dressing or just mix ketchup mustard and mayo in a little bowl. I used ketchup and mayo mixed with sweet pickle relish and grated onion. I like grating the onion because it gives the flavor of the onion juice.
When the pastry comes out, top each square with a piece of lettuce, then a dollop of sauce, then the burger and finish with a nice crisp pickle. This is a fun and delicious method you could adapt to so many things! Prepare the pastry as shown and top with whatever kind of cheese you like, add a piece of chicken, add a meatball, a piece of shrimp. Lots of options, be creative!!Enjoy
