Super delicious and easy couscous salad is my family's favorite meal! I've been asked to make it again and again. The secret is tender couscous, crunchy veggies, curry dressing and chickpeas. This is a win-win when it comes to couscous salad. I hope you'll love it too. Bon appetit!

Ingredients: 🫒🥕🧄🌶️🫑
1 1/2 cups couscous
2 cups boiled water
3 tbsp olive oil
Juice of 1/2 lemon and its zest
1 pressed clove garlic
1 tsp salt
Black pepper
1 tsp curry powder
1 tsp turmeric powder
2 cups cooked chickpeas
1 green pepper, 1 red pepper
1 medium carrot
2 scallions
1 medium bunch parsley
