Maria passed away on 12 December 2021 aged 92; this video was made in 2020. She made this lasagna for her customers to take away. Over the years she adapted the recipe and the result is a green lasagna, layered with a pork ragù and béchamel sauce. This is Maria's second appearance for Pasta Grannies!
Adjusted to feed 4 -6 people:
For the pasta:
● 250 g 00/plain flour
● 110 g eggs
● 30 g fresh spinach, leaves only
For the ragù:
● 2 garlic cloves
● 3 sage leaves (wrapped in muslin)
● 200g unsmoked pancetta, diced
● 1.5 kg minced pork (loin or shoulder)
● 1.5 litre beef stock
1 heaping tbsp of tomato paste
400 g passata
● Salt, pepper
For the béchamel:
● 30 g butter
● 30 g flour
● 1/2 litre whole milk
● 1/2 a nutmeg, grated
● For sprinkling: 50g Parmigiano (or more, if you feel like it)

  • The joy on her face as she's working is heartwarming, I only wish to reach her age and not be bitter and cynical as I'm now
  • @Algrenion
im gonna just assume that the people who disliked were rivals. Competative grannies who take issue with her recipe.

One year ago Maria inspired me to start cooking home made pasta. A couple of days ago I heard from some colleagues: 'you just cooked the best lasagne we ever eat'. Grazie, Maria!
  • Sad to see the update that she passed away. :'( She's left us all a piece of her legacy. May she continue to cook up a wonderful Italian feast in heaven!

Grandmas: people who can cook anything perfectly every single time without any measurements of ingredients.
  • The fact that she's 91 yo and still can climb stairs. She's really healthy. God bless you, grandma

This is what we are missing in society, love and a sense of purpose. This video almost makes me cry because we are so disconnected from the simple things that matter most.
  • I have been cooking this lasagna so many times! My family loves it so much I don't use any other recipes. I needed now to check recipe again and saw that Maria is no longer with us 😢 Rest in peace dear Maria ❤
  • Let’s all agree we did not search for this, but liked the video😂

Nuts how a 91 year old woman gets a tissue to protect her hand from the oven, I literally prepare as if i'm sticking my hand into a volcano

" I'll make you a lasagna you can't refuse" - every Italian grandma . That looked freaking delicious ! If only I could eat some of it

I’m sorry to hear that Mamma Maria died…she inspired me to make this lasagna verde, and it’s THE BEST lasagne I’ve ever tasted. Thank you for sharing her recipe and this amazing lady’s life on film. I will arrange a requiem Mass for her and pray for the repose of her soul. requiem æternam dona ei, Domine; et lux perpetua luceat ei

I think all those ladies should be listed at UNESCO in the intangible cultural heritage list.
  • How cool is it she’s on YouTube sharing this wonderful family recipe. This is one of the good things about the internet.
  • These kind of Grandmas are an essential part of a grandchilds life. Sending love and light to all these beautiful grandmas who cook and still show love and affection to the generations after them 💚

    1. She pushed the oven door down with her hand on the inside and didn’t even blink. 2. She got the first piece out perfectly. We are watching an expert.
