So-Tender Swiss Steak - A Favorite in our Family - You’ll Love the Taste, the Tenderness and Aroma!

So - Tender Swiss Steak

1 cup all-purpose flour
2 teaspoons salt
1 teaspoon pepper
2 pounds round steak, cut into serving sized pieces
Vegetable oil
1 medium to large onion, sliced and separated in rings
2 cups boiling water
2 Tablespoons Worcestershire Sauce

Gravy:
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/4 cups beef broth

In a shallow bowl, combine flour, salt, and pepper. Dredge steaks a few pieces at a time. In a skillet, brown steak in oil on all sides. Layer onion slices and steak, alternately in a Dutch oven. Combine boiling water and Worcestershire sauce and pour over the steak and onions. Cover and bake at 325° for 2 to 2 1/2 hours or until the meat is very tender. Remove steak and onions to a serving platter and keep warm. Save the pan juices.

Make the gravy by placing the flour, salt, pepper, and broth in a jar with a tight fitting lid. Shake until this is well mixed. Using a sauce pan, bring the pan juices to a boil, then pour in the broth mixture. Stir for approximately two minutes until slightly thickened. Pour gravy over the steak.

    I haven’t had Swiss Steak since long before my mother passed away. Her version had tomatoes in it. Absolutely delicious. Miss it, but not as much as I miss her. ❤

    I am so happy to see your recipe. I'm 70 years old. My mom used to make Swiss steak with gravy when I was a kid. I couldn't find her recipe since she hadn't made it since I was about 10 years old. She used round steak as well. None of this modern hamburger patties I see used in new recipes for Swiss steak. Lol. Round steak was always cheaper and this was always a great way to have round steak tender enough to eat it. I think she had a slightly different technique, as I remember her cooking it all in a big pan on stovetop. But it still simmered for a long time. I can't wait to try this. Brings back memories of my Italian mom, who passed away 3 years ago. I love your explanations and running commentary, as I think its a great way to teach and encourage young cooks.

  • My mom taught me how to make this when I was a teenager. She called it poor man's meal, because it would feed me my brother and her and still have leftovers for her to take to work the next day. She would have the steak tenderizer at the butcher. When it was done we had mashed potatoes and green beans and biscuits to sop up the gravy. I made it for my husband on our first date and he fell in love with it. He said that was when I fixed that he knew I was a keeper.

  • Swiss steak has always been my favorite meal ever! My little Mother would fix it for me on my birthdays. I fixed it tonight for dinner. I do put peppers and tomatoes with my swiss steak. ❤❤

    Oh my gosh! I just fixed this last night. My mom always fixed it with a tomato gravy. I did mine in the instant pot for the first time. It turned out tender and delicious. I love your channel.

    Swiss steak is one of our family's favorite dishes!! My Grandparents made it. My Mom made it, and now I carry on the tradition! The children in our family who didn't have the opportunity to know their Great-grandparents or Great, great Grandparents, get to know them thru this dish. I love sharing stories of my Grandparents and my Mom with the younger kids. It allows them a connection with some of the best people in our family. When we need comfort food, I make Swiss steak. We make ours a little different. We use tomato juice as the broth and gravy. My son used to call his plate "Swiss steak with volcano potatoes." LOL. We also serve with corn and a salad with oil and vinegar dressing. Thank you for the video and walk down memory lane. I needed it today.

    That looks so delicious. I always use round steaks to make a dish we call 8 hour steak. You simply take 2 round steaks, place them in a 9"x 13" pan. Pour 2 cans of cream of mushroom soup and 1 pkg. of Lipton onion soup mix on them. Cover with foil and place in a 200 degree F. oven for 6 to 8 hours. The soup makes a delicious gravy and I also serve it with mashed and corn. Too funny!

    I startedaking this 45 years ago when Corelle was popular. It's those dishes that make it so tender. I still use them. They will make any meat cut with a fork.
