Recipe for Strawberry Jam without pectin:

5 cups mashed strawberries (about 3 to 4 lbs)
1/2 cup of fresh lemon juice (about 3 )
3 cups granulated sugar for low sugar recipe or, 6 cups full sugar recipe
the rinds of the juiced lemons

Place a small glass plate or saucer in the freezer.

mash the strawberries, stir in the lemon juice, reserve rinds.
Add in the desired sugar, 3-6 cups
Add in the lemon rinds to the mixture and set on stove in large pot, preferably with a heavy bottom, jam pan or dutch oven. Bring to a boil and cook on high stirring to keep from sticking until it reaches 220 degrees, use a thermometer or until a hard boil that you cannot stir down. boil 1 minute or so, then lower heat slightly and cook for 15 to 20 mins at a medium boil. After 15 to 20 minutes, do a gel check by removing small plate from freezer, put a teaspoon of jam on plate and return to freezer for about 2 minutes. Remove plate from freezer and draw your finger through the jam in the center and look for a path that does not fill back in. If it doesn't fill in it's ready to fill 1/2 pint, or jelly jars. If it is not ready, return to heat and cook another 3 to 4 mins and test again. Fill hot jars to 1/4 inch headspace. place on 2 piece lid and bands, fingertip tight. process in steam canner or water bath canner for 10 minutes. recipe can be doubled.

Iā€™m growing my own garden for the second yr in a row, and want to get into canning so Iā€™ve subscribed. I have zero equipment yet and have nvr canned a thing so Iā€™m a complete newbie at this. I have some strawberries that r setting fruit right now, and I really want to make my own jelly. Iā€™m also growing corn, peppers, cucumbers, zucchini, cantaloupe, watermelon, tomatoes, potatoes, green beans, blueberries, and onions. I always make my own spaghetti sauce from scratch and would love to can it rather than freeze it for a longer shelf life. Looking fwd to learning!
  • Thankyou so much for this video. I just ordered a steam canner and I am so happy to have seen this video. I have always used a water bath canner. I was a little nervous about using the steam canner but now I can't wait for it to be delivered.

  • Great video! I am trying canning for the first time this year! Watching your video makes me feel like I can do it! Can we do this with frozen fruit?
  • Little tip for mashing lots of strawberries, use a stock pot. It has a flat bottom surface, making it easier to mash and no strawberries jumping out of bowl.šŸ˜ŠšŸ˜Š

In 40 years ....never covered jars with wtr..... šŸ˜®ā¤
  • Coulld this be done with cherries? I've never made jam, preserves, or pie filling bc we eat keto but i want some in storage. I use my pressure canner to steam can. I've also never done water bath. I started canning last fall. I really want to use the least sugar, or sugar substitute for lowest carbs but still have flavor. If shtf happens, some good preserves will be priceless.
