Used by my grandmother and mother, this method is a family method for canning tomatoes. A delicious way to preserve tomatoes for the winter. In winter you will have a wonderful tomato salad with delicious spices on the table. This recipe has become one of our family's favorite recipes. Cooked with love!

Ingredients and preparation:
2.3-2.5 kg of tomatoes
Cut the tomatoes into 4 pieces
6-7 cloves of garlic (2 cloves per 1 jar)
A bunch of dill
A bunch of parsley
Greens at will
Use the stems, don't throw them away
400-450 grams of onions
Wash and sterilize the jars appropriately
I boil each jar for a few minutes
Sterilize the lids by boiling
I use 1.5 liter jars
Place 1 clove of garlic in the bottom of the jar
Black Peppercorns

Add 1 more clove of garlic

Fill the jar with tomatoes

Do the same with the rest of the glasses

Last layer of onions and greens
Boil the drinking water
Pour the boiling water into the glasses
Close with lids
Leave for 15 minutes to allow the contents of the glasses to warm up
After 15 minutes, drain the liquid into a saucepan
I use a special sieve for this
Now the marinade should be boiled again
For a 1.5 liter jar: 2 teaspoons salt (18 g)
2.5 tablespoons of sugar
1 tablespoon odorless refined oil
Bring the marinade to a boil
Stir well to dissolve all the spices
Pour 25ml of 9% vinegar into each glass
Pour the boiling marinade over the tomatoes
Screw the jars tight
Turn them upside down to check they are tight
Cover with a large warm blanket and let cool completely
Can be kept for one year at room temperature

    That steamer lid is genius, I'm going to make one out of an old lid. The "special" strainer is genius as well, if I can't find one, I can also make my own by drilling holes in an old lid.

    Have used this and a dozen other methods for tomato preservation over the years About 5 years ago we experimented with dehydrating tomatoes. Now it's the only preservation method we use. So simple and easy and the flavor for sauce, soups, and even salads is far superior to any other method.
