Garlic Hummus:
1 can chickpeas
1 TBSP lemon juice
1 TBSP olive oil
1/8 tsp ground cumin
1/4 tsp paprika
1/4 tsp sea salt
1/4 tsp black pepper
2 cloves garlic

1. Separate chickpeas from the liquid in the can and set aside.
2. Pour chickpeas into blender. Add all other ingredients. The liquid from the can should be added until you reach the desired consistency. I use around 1/4 cup. Blend everything together. Serve with veggies or pretzel crisps.

(I do like to add 1.5 cups of cold water instead. I find the eggs are less likely to crack when I use this amount)

Pumpkin seeds:
1. Separate pumpkin seeds from the guts of the pumpkin. Rinse multiple times really well and make sure that they are very clean.
2. Add pumpkin seeds to a new bowl and soak overnight in a couple tsp of salt and water.
3. The next day: Drain pumpkin seeds and rinse off well. Dry with a towel vigorously. Pour into clean bowl. Season liberally with salt, pepper, garlic powder and paprika.
4. Spread onto lined baking sheet in one thin layer. Bake at 360 degrees for 10 minutes. Stir at the 10 minute mark and bake for another 10 minutes. Repeat this process again every 5 minutes until pumpkin seeds are lightly brown and crunchy. Let cool on baking tray completely before storing.

    Very impressive that you do all this with all your little ones. I'll have to try the pumpkin recipe. The lack of baking powder will keep them from rising so I might add 1/4-1/2 teaspoon.
