Reynold, I have no doubt will be in some time the 'Go to' guy for many including the world class chef's in respects to deserts.. He is already as Gordon said, 'the king of deserts'. I see books, and shows, and the admiration world wide. JMHO.

As a chief, you need to win not only the taste buds of the judges but also your customers.. consider that katty would be more likely representing every future customer of your resto. And it is important to receive complements coming from other people.. remember that majority of your going to serve are not master chiefs with meticulous taste buds..
