🇲🇽CHILAQUILES VERDE: Add chilaquiles in salsa verde in a styrofoam container. Add cream Add basket cheese. Add chicken. Add onions and serve

    The soup with the gelatinous intestine meat is called menudo and it is one of my favorites. It is more commonly eaten in the winter time since it is such a heart warming and satiating comfort food.

I cook Mexican food everyday for my small family and the time and work that’s put into it can be a bit tiring and exhausting. Those ladies deserve way more than that♥️
  • Mexican street food is awesome. I enjoyed it more than the restaurant food there (which wasn’t bad either). Some of the best meals I had, Tortas or Tacos, were only $1-$2.

  • So glad you went to Mexico, finally, and that you experienced true Mexican food. One thing about huitlacoche, the corn smut, the slight sourness disappears with time. So, if cooked and left to sit for a day (like marinades) in the fridge, the sourness disappears and sweetness is highlighted. Due to the French occupation in the mid 1800s, we have crepes in Mexico. A great way to have huitlacoche is cooked with diced poblano peppers, regular corn, stuffed in crepes that are doused with a poblano-cream sauce and covered with Oaxaca cheese.
