It’s another beautiful day and today I’m going to show you guys how to make my absolutely favorite or should I say my family’s favorite BEAN AND CHEESE BURRITOS!

‼️the beans will thicken up as they cool
**you can always add onion, chorizo and jalapeños before frying!

Ingredients:
For the flour tortillas: to make 16-18 I aim for 74g each ball
5 cups APF
Salt I used 2 tsp
8 tbsp unsalted butter
1 3/4-2 cups hot water
For my beans
1 lb pino or Peruvian bean
Coarse salt I used 2 tsp
8 cups water
3 New Mexico or guajillo chile pods
1 garlic clove
1/4 tsp ground cumin
1/4 tsp oregano
1/2 tsp salt (optional)
1 lb cheese I use medium cheddar and Oaxaca
1 serving of love 💕

  • My girlfriend in college told me how much she loved bean and cheese burritos. I was thinking “yeah, they’re OK.” Then she took me to a place that had freshly made tortillas, and their beans were super good. Then i finally understood what she’d been talking about.

    For those who may not know: If possible, use mexican oregano, not italian. Two different flavor profiles.

    One of my comfort foods is also super simple... smashed beans with a thin slice of queso fresco (ranchero) in a folded tortilla warmed up on a comal with the beans and cheese inside. I like the tortilla to be a little crunchy (not too much). When done I put a little bit of salsa and have it with a cup of coffee.

    I have so much respect for people who cook and it’s all from scratch. It’s a lot of work and to make it with love and passion. It makes the food /dish taste even better. The reason I say this is that someone cooked dinner one night and that person was angry. That particular dish that he made was my favorite and it’s usually delicious. For some reason his anger energy transferred to the food and it was horrible.

  • I love these bean and cheese burritos. I like to make a bunch ahead and wrap them in foil and freeze them for the week. Sometimes I add corn and rice or eggs and sausage for a little extra variety but these are great simply as they are!

    Me too! Bean & cheese burrito is one of my go to comfort foods. I typically use frozen, or beans from a can - not from scratch like you do. I really like chopped onions if I can get it and Habanero sauce. I eat a lot of these and am totally impressed with your energy.
